60g of Xylitol
15g of Cocoa paste
10g of Cocoa powder
5 drops of Chocolate Stevia
1g of pure Stevia powder (or replace with other 50g of Xylitol)

In a saucepan, put 50ml of milk with xylitol, pure stevia, chocolate stevia drops, cocoa mass and vanilla.
Simmer until the ingredients have dissolved completely.

Strain the chocolate mixture just melted and let it cool.

In a separate container, lightly whip the 500ml of cream to thicken it and gradually add the remaining 150ml of milk.

Add the melted chocolate with cocoa powder to the freshly whipped mixture.
Mix with an electric mixer until everything is combined.

Add the final mixture into an ice cream machine and let it work for about 25 minutes, or until the ice cream is solid enough.
