Chocolate salami without sugar and without eggs - low carb and ketogenic

Chocolate salami is one of the most loved raw desserts of all. This reinterpretation of the original recipe does not involve the use of dry biscuits or sugar, making the recipe low-carb and gluten-free. Furthermore, the recipe does not include the use of eggs and consequently is also suitable for vegans.

Directions

For the cookies

    In a container add all the dry ingredients: almond flour, coconut flour, erythritol, xanthan gum and salt, and mix to mix everything.

    Add the butter (softened) and mix it in until the mixture is compact.

    Spread the mixture onto a silicone mat or parchment paper. Bake in a static oven at 350° (180° celsius) for 10 minutes.

    After 10 minutes, let it cool for about 15 minutes, lower the temperature to 320° (160° celsius) and cook for another 5 minutes.

    Let it cool for at least 30 minutes in a cool place.

The chocolate salami

    Break the biscuit base coarsely.

    Melt the cocoa mass in a container, also add the melted butter and stir to mix the mixture.

    Add the erythritol, cocoa and mix until a homogeneous mixture is obtained.

    Add the biscuits and mix the mixture.

    Move the mixture onto baking paper and compact it until you get the classic salami shape. Leave to cool for at least 2 hours in the fridge before serving.
