Flourless ladyfingers - low carb and ketogenic

10 drops Vanilla liquid Stevia
80g of Almond flour
25g of Coconut flour

First sift the coconut and almond flour 2 times. The first to eliminate lumps and the second to incorporate air.

Separate the yolks from the whites in 2 bowls.

Beat the egg whites until stiff.

Whip the egg yolks with the erythritol and liquid stevia.

Once the egg yolks have been whipped, add the previously sifted flour and mix with a spatula.

Now gradually incorporate the egg whites whipped previously.

Add the mixture into molds for ladyfingers. If you do not have the molds, use a piping bag to distribute the biscuits on baking paper.
The mixture should make about 25 cookies.

Cook for 8 minutes at about 390° (200° celsius). Let it cool completely before serving.
