100g of Roasted hazelnuts
80g of Almond flour
20g of Coconut flour
90g of Erythritol
20 drops of Vanilla Liquid Stevia
90g of Butter
For the filling
50g of Cocoa mass
40g of Erythritol powder
10 drops of Liquid Chocolate Stevia
5g of Coconut oil

Chop the hazelnuts in a food processor.

In a bowl, add the butter with the erythritol and the drops of liquid stevia and mix until all the ingredients are incorporated.

Add the almond flour, coconut flour and chopped hazelnuts, and mix until all the ingredients are incorporated.

Lightly spread the mixture on parchment paper and refrigerate it for about 20-30 minutes. Then form balls of the same size (about 10g each) and infuse at 320° (160° celsius) for 15 minutes.
Filling

Melt the cocoa mass in the microwave or in a water bath and then add the powdered erythritol and mix. If the dough becomes too compact, add a few tablespoons of coconut oil (melted - about 5g).
However, the chocolate must be thick enough to be able to fill the cookies.

Once the biscuits have cooled, add a small portion of chocolate between 2 biscuits and add them. Repeat for each biscuit and then refrigerate again for at least 30 minutes.
