Ketogenic Lady's Kisses - Low Carb and Sugar Free

Baci di dama are tasty hazelnut biscuits with chocolate in the middle. This reinterpretation of the original recipe does not involve the use of sugar or flour, making the recipe low-carb and gluten-free. Furthermore, the recipe does not include the use of eggs and consequently is also suitable for vegetarians.

Cookies

    Chop the hazelnuts in a food processor.

    In a bowl, add the butter with the erythritol and the drops of liquid stevia and mix until all the ingredients are incorporated.

    Add the almond flour, coconut flour and chopped hazelnuts, and mix until all the ingredients are incorporated.

    Lightly spread the mixture on parchment paper and refrigerate it for about 20-30 minutes. Then form balls of the same size (about 10g each) and infuse at 320° (160° celsius) for 15 minutes.

Filling

    Melt the cocoa mass in the microwave or in a water bath and then add the powdered erythritol and mix. If the dough becomes too compact, add a few tablespoons of coconut oil (melted - about 5g).

    However, the chocolate must be thick enough to be able to fill the cookies.

    Once the biscuits have cooled, add a small portion of chocolate between 2 biscuits and add them. Repeat for each biscuit and then refrigerate again for at least 30 minutes.
